DESIGN PROJECT SPECIFICATION
PROJECT 7/2022 TITLE: MANUFACTURING OF BLUE CHEESE (GORGONZOLA TYPE) FROM RAW COW MILK . Project Background:
South Australia is a major food supplier and produced worldwide. Blue cheese is becoming more and more popular internationally and the global cheese industry is expected to reach USD 106 billion in 2026. A large size dairy company, currently only operating in Australia, is therefore planning to expand into to international market.
Design Project Scope
The project will design a manufacturing plant for the production of 10t blue cheese per day from raw milk, and determine the process economics. Raw milk will be delivered every second day from different suppliers and stored on-site. As milk is a natural ingredient the composition fluctuates, so a conditioning is important to obtain a stable product quality.
An important aspect is food safety, hygienic design and cleanability of the plant.
Product Specification
Fit for human consumption. Must meet Australian and international standards. 10 tonnes per day. Consistent product quality.
Plant Availability and Design Life 95% availability and minimum plant life of 20 years Feedstock Specification Raw milk from different suppliers, composition may change between seasons and suppliers.
